Creamy Cajun Chicken Pasta
This easy, creamy, Cajun chicken pasta is made with fresh peppers, green onions, chicken, Parmesan cheese and more! It doesn’t get any easier than an easy pasta dinner recipe made in less than 45 minutes.

12-16 oz Linguine
4 large chicken breasts, thinly sliced or 1” cubes (Be creative and substitute shrimp or andouille sausage or mix all three for some true Cajun)
2 Tablespoons Cajun Seasoning, or to taste (use Slap Ya Mama or make salt-free, recipe below)
1/4 cup butter
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 8 oz. package mushrooms, sliced (white or cremini)
6 green onions, sliced
2 cups heavy cream
1 teaspoon dried basil
1 teaspoon lemon pepper
1 dash salt (optional)
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/3 cup shredded parmesan or romano cheese
1) Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2) Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until tender, approximately 5 minutes.
3) Add the sliced bell peppers, mushrooms and green onion. Stir for 2 to 3 minutes. Reduce heat.
4) Add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through. Sprinkle with grated Parmesan cheese and serve over linguine.
Optional: Mix in the linguine and serve. Our kids love pasta so they like to go heavier on the pasta so we always serve separately as shown in the picture.
Note: Our family likes this dish on the spicy side so you can adjust spices to your liking. Cajun seasoning contains a lot of salt, you can make your own salt-free cajun seasoning here.
